Ash-e Reshteh

Ash-e Reshteh is made all around Iran. There are many types of Ash. Ash-e Reshteh takes its name from the special linguine pasta that is used in it. It is usually served with a kind of yogurt known as Kashk which is a type of yogurt whey. In the process of making cheese, the remaining liquid after milk has been strained is called whey.

How is it served?

Like any soup it is served in a bowl. It is usually served with Kashk (like Greek yogurt), fried crispy chopped onions and mint.
